Poke, ramen and bubble tea under one roof in downtown Hoboken.
Bowls & Noodles serves poke bowls, Japanese ramen, sushi burritos and bubble tea on Washington Street, in downtown Hoboken. Its logo, a noodle bowl in a cyan headband, also marks Bowls & Noodles shops in West Caldwell, Summit and Wayne, with the same three words under it: fresh, healthy, delicious. The vegan poke bowl is built on organic tofu, and the Hoboken menu names a few dishes for its town: the Hoboken Burrito, the Hoboken Roll and The Path Roll. Since September 2026, Pinkbot has delivered its orders from Washington Street.

The menu
Ramen, poke, sushi burritos and boba on one menu.
The ramen comes in rich broths: tonkotsu, a creamy Tokyo-style pork bone broth finished with black garlic oil, plus miso and soy-based shoyu, each with pork chashu, grilled chicken or shrimp and a marinated egg. Poke bowls and sushi burritos come as signatures or built your own, warm rice bowls run from katsu don to bulgogi, and the milk teas, fruit teas and slushes each come with a free topping.
