From a food truck to SE 5th St

An all-vegan kitchen built to please every palate.

Chef Gianluca Mitrano, affectionately known as Mr. Mitrano, and Dr. Simón Álvarez, both from Venezuela, started The Cocinita as a meal-prep service, took it onto a food truck and opened a storefront in 2020. Today it cooks at 70 SE 5th St in Brickell. Their idea from the start was a place that delights every palate with Latin American classics. Everything is vegan, and by Gianluca’s count, 80% of the people who enjoy The Cocinita’s food are not.

“I prefer to evangelize through food. I simply serve you a dish, and if you like it, that’s my reward.”Gianluca Mitrano, to Miami Diario, 2023 (translated from Spanish)

The menu

Cachapas, stacked burgers and bowls, all of it vegan.

The menu mixes Venezuelan, Colombian and Mexican cooking with burgers and bowls, all without animal products and much of it gluten free. The burgers stack pea-protein patties, and The Infatuation called them “some of the best vegan burgers in town.” One carries the chef’s own nickname: the Mr. Mitrano. The Choricachapa, a sweet corn cachapa with plant-based cheese and sausage, is The Cocinita’s own creation.
